When To Bake Cakes And Cupcakes? When To Make Frosting?

I am making 2 dozen or more cupcakes and a cake for my daughter's birthday. The cake is for Saturday and the cupcakes are for Sunday. When should I make them. I was thinking Friday??

I am making SMBC for the cupcakes and the cake. When should I make that?

I probably wouldn't wait until Friday! You have to consider things that might go wrong!!! I would make them at the beginning of the week, like Tuesday or Wednesday and either put them in the fridge or freezer. Just make sure you bring them to room temp before icing them or you will have condisation under the icing and this could be disaster! As far as the icing...sorry, I can't help you out there cause I don't make it often enough.

You can make everything on Friday, or, as the PP stated, you can bake earlier in the week, freeze and then take them out a few hours before you want to decorate. If you make the frosting ahead of time and store it in the fridge, remember to bring it to room temp and then rewhip before using.
