Cream Cheese Frosting

Does cream cheese frosting need to be refridgerated? Logically I think yes, but I've been to plenty of cake shoppes where they have their cream cheese frosted cakes/cupcakes sitting out in room temp. What is the right thing? And if it does, after I frost it and cover with fondant, I don't have a fridge big enough to store a two tier cake. Advice?

Yes it needs to be refrigerated.
Here is a recipe for a cream cheese butter cream that can be kept at room temp.

I don't refrig mine. I've made cakes quite a bit for family using cream cheese BC that have sat under a cake dome for a couple of days with no problems.

Same here and they have always been fine. I, personally have a 3 day save & toss. But I throw all food out after 3 days.

Thank you! I think I will keep it refridgerated until I frost the cake and cover with fondant. Then after that, I will just leave it out since it will only be about 24 hrs after I fondant it that it will be eaten.
