Need Quick Help: Can I Use Lemon Extract In Ri?

I want to add lemon extract to flavor my RI, but it says it's made with oil of lemon. Will that break down the RI?

I would say extract made from acohol is fine to use in royal icing. The oil part is where you have to watch it. What I would do is make the royal icing, then after it is fully made mix in the lemon extract. Once your icing is made adding a little bit of oil should not break it down. If you add the oil before you mix it the egg white won't beat up.

You can always try a small amount of icing to see how it works.

I do it all the time...haven't had any problems so far.

lemon -extract-, yes, that's fine. Even tho it has lemon oil in it it's so minor it doesn't affect the product.

Now, if it's the Lorann flavored -oils-, then no. I once used Lorann oil in a batch of RI and it never set up properly.

I use almond extract in mine ALL the time, never without. I do use Antonia74's recipe & I add mine before I add the ps
