If you were at the bookstore and decided to buy only one book which would it be? Cake Bible or Heavenly Cakes.
It would depend on what I'm looking for.
Cake Bible = The basics and essentials of baking cakes. Aimed at pros and committed/interested homebakers. It's a data base of cakes, filling, frosting and other cake components. The reader can mix and match, although there are suggested pairings and instructions for completed cakes. Also very good information for making wedding cakes and on the science of baking. I also love the section on making any size tiers. I turn to this book again and again. It lives up to it's name.
Heavenly Cakes = a set of recipes for specific cake compositions. In short, more like a standard cookbook, although there is some discussion on cake science and building wedding cakes. Gorgeous pictures. This book gets opened once in a while for inspiration and if I'm looking to try new recipes.
So, what are you looking for in the book you want.
The Cake Bible to learn scratch baking and a lot of recipes.
Heavenly Cakes if I was just thinking in terms of dessert.
