I have a request for a 9x13 two layer red velvet cake, cream cheese frosting between layers, cream cheese GLAZE on top and sides instead of frosting. I also need to write Happy Birthday and do flowers and leaves. I usually decorate with royal icing, but that will dissolve in the moisture. HELP!

I should have added that the cake will be refrigerated for a couple of days before serving. I have never had luck making flowers out of cream cheese frosting, so what do I use to decorate with? Can something be added to cream cheese frosting to make stable, non-dissolving decorations?

I have piped and actually made roses with cream cheese icing. Take a bowl full that you will be decorating with and add some sifted powered sugar until you get the stiffness you want to make your flowers and leaves.

Thanks! I'll give that a try. Should I add some meringue powder as well? I don't have to do this cake until tomorrow, so any and all advice is greatly appreciated.
