I was wondering how long (days) an iced cake will stay fresh in the fridge and how to store it properly. I was also wondering how people typically transport wedding cakes to reception sites. They are so big, how do you keep them covered and/or safe from getting contaminated?

Unless you have used a perishable filling in the cake, there is NO reason to refrigerate a cake. A typical home refrigerator will promote drying out.
