I have some dry NFSC that I would rather not throw out. They taste fine, just a little drier than I like- I was a little lazy getting around to the decorating. Any ideas on how to soften them up?

A little sugar syrup, plain or flavored, would do the trick.

I don't know if this works with cookies that don't have brown sugar in them, but when you have hard chocolate chip cookies, you are supposed to put them in a sealed container with a slice of bread. Softens them right up!
