I want to do a variation on the cherry blossom cakes for a small wedding I'm doing for a friend. I thought about using modeling chocolate for the tree bark so I could get a good dark color. I plan on using the recipe from this site (chocolate chips/corn syrup).

Questions:

Could I use milk chocolate or does it have to be semi sweet (I was afraid there might be too much of a difference in the milk fats)?

How do I attach it to a BC cake, I'm planning on making RI flowers-do I just attach it with RI?
