Hi everyone. Does anyone have an opinion on royal icing made with egg white vs royal icing in powder form that you just mix with water in terms of sheen and consistency? I'm doing some brush embroidery and have been using powdered royal icing that you just mix with water but its not giving me a nice look. I've been looking at this vid:

and the brush embroidery is just so perfect. My royal icing is giving me streaks and isn't spreading smooth. It's driving me nuts.

I've always heard that royal icing made with egg whites is better for cake decorating (i.e. stringwork) because it has greater strength than royal icing made with powder. Not sure if that's true or not, but just thought I'd throw it out there for you as a possibility? icon_confused.gif It might make the difference in terms of brushed embroidery too.
