I have a lot of extra buttercream from a cake I just made. how long does it keep in the refrigerator? I have another cake but not for a couple of weeks. I'm thinking it probably would be no good, huh?
Freeze it.. I do it all the time and it works fine. Just let it completely thaw before using.
I use my sour cream containers (from making my WASC cake) and put my extra icing in there. I just put a piece of tape on the front with the color. I store in the freezer for WEEKS.
