Need A Milk Free Cake Idea...
Baking By confectionsofahousewife Updated 30 Dec 2009 , 4:42pm by ahuvas
I have a friend who wants a cake for her son's 2nd birthday in a few weeks. The only problem is that he is allergic to all dairy products. No butter, milk, sour cream, etc. All of my go-to white, yellow, and chocolate cake recipes have these ingredients in them. Does anyone have a recipe (that still has a good texture and taste) that doesn't have milk in it? Thanks for any suggestions.

I have a great orange and almond cake recipe; dairy free and wheat free. PM me if you'd like it.
I bake dairy free often - I replace the milk or sour cream in the recipe with something non-dairy... rice milk for milk or tofutti sour cream for sour cream or yogurt... always works fine and no one can tell the difference in taste or texture.
Non-dairy chocolate cake
250 grams margarine
3 cups sugar
2 cups water
5 heaped Tbs cocoa
1 tsp baking soda
4 eggs
3 cups self-raising flour
Preheat oven to 180°C.
Place margarine, sugar, water, cocoa and baking soda into a large pot.
Slowly bring to boil and simmer for 3-5 minutes.
Let cool.
Whisk the eggs and self-raising flour into cooled mixture, and pour into a greased 9 x 13 inch pan.
Bake for 45 minutes 1 hour, or until done.
