I have been having trouble with my cupcakes coming out hard on top. Two days ago I tried a recipe from here "Decadent White Chocolate Cake. (I made cupcakes with it). They were very good except the top of the cupcakes were hard, although they were moist inside, what am I doing wrong?
You might try to lower the temperature of the oven. Instead of baking at 350, bake at 325 and leave them in longer.
