How far ahead can you make a 5 tier white cream cheese wedding cake with buttercream icing and how do you store it for a trip 100 miles away. I am mother of the groom and need to be there for 3 days prior to wedding. HELP!

Im confused. The cream cheese is the icing or the cake?

Any way, you're probably not going to be able to use cream cheese. Dairy has a 4 hour safety limit outside refrigeration. The amount of sugar used *can* change that, but you practically need to be a chemist to get the cream cheese and sugar ratio to the safety level.

Leah_s, I read it as the cake has cream cheese in it, not the icing. My thought would be that cooking it would be like eggs in the cake??
