Has anyone ever bought the 50lb block of hi-ratio shortening? I'm thinking it's best to order that for my cupcake shop opening in January, but wanted to know how many batches of buttercream you can make out of it. Do you think starting with one block is enough or do I need to order 2? TIA

Hi ratio weighs approximately 7 oz./cup so there are about 110 cups in the 50# cube.

A lot of recipe uses 1 cup of hi-ratio to (approximately) 1# powdered sugar. So you can anticipate having enough hi-ratio for at least 110# of powdered sugar.

And if you're not going to be using all that hi-ratio immediately... A lot of members put the number of cups of hi-ratio called for per b/c recipe in zip lock freezer bags (then freeze) for convenient future use.
