will they be okay to thaw and use?

i'm gonna have to turn the fridge at the shop down!

You're not alone, I've had that happen with my residential 'fridge. icon_sad.gif

Seems even the government agrees that you can use frozen fresh eggs (in the shell) for baking. Just thaw and use immediately:

Sure, they're fine. Many, many bakeries buy buckets of frozen eggs, all the time.

The yolks might be a little funky, texture-wise. The buckets of just yolks that are frozen are either sugared or salted to prevent seizing. The buckets of frozen whole eggs are homogenized.

You'll just need to beat them a little better to get it homogenized, the yolks get a bit firm and take more mixing.

They will be just fine for baking. I'm not sure about the whites for meringues.

I used to raise chickens, there really isn't much you can do to hurt them.

The eggs come out over 100 degrees F.

Now if some one wants to read this as it's okay to leave eggs out for days on end at room temp. , NO this is not what I said.

You really need to refrigerate them, because that's the way they came to you. Even if you got them from me straight from their butts, you still should refrigerate.

Refrigeration helps prolong the quality of the egg.

Know this is old, but I was just about to post this question! My man moved the eggs to the very top shelf after retrieving something in the fridge and forgot to move them back and they froze! He threw out the cracked ones. I was about to freak out cause I'm doing cupcakes tonight. Lol.

The eggs are fine. You can buy frozen eggs, you know.
