Can I Ice It Now?

I have a cake order for the 22 Dec can I ice it now and will it keep. The cake in question is a madera with buttercream filling and sugarpaste covering.?

Hi, its too early. Have you baked the cake?

I would bake the cake two days ahead. So for 22nd, bake on the 19th. when its cooled completely, torte and fill and I would leave it over night to settle. Then the next day crumbcoat and cover it with sugarpaste and decorate.

I always give this advice when asked that particular question. Someone else's cake could stay that long.... maybe maybe not, but you need to test YOUR cake and your recipe to know how long it's good for. I know right now you probably don't have the time to test. But, you might want to do that in the future.
