Ok so a friend of mine asked me to make her 4 dozen cupcakes to be delivered on friday. I spent all morning baking, filling and frosting all 4 dozen. She just called me and said that she now needs me to deliver them on Monday. She wants the same cupcakes, so my question is should I freeze them or refrigrate them to last till monday?
Here are the flavors and fillings
Lemon cake, lemon curd and seven min meruange icing
chocolate cake, salted caramel filling and dark chocolate buttercream
mint chocolate cake and mint buttercream
yellow cake, pastrey cream and dark chocolate icing.

I don't know . . . that's 5 whole days!! I'm wondering if the meringue icing won't start to break down after that long.

If it were me, I'd tell the friend (in a very nice tone of voice) that you have them ready as promised, that you're dropping them off on Friday as promised, and that she can decide whether to refrigerate or freeze them.
