I have to decorate a cake this weekend that will have fondant decorations on it, so I would rather not have to refrigerate it because I've had problems with refrigerated fondant sweating. So, my question is, is cream cheese frosting out? Can cream cheese frosting sit out of the refrigerator for a day or so until after the cake is cut, or will it spoil?

I have always been taught that cream cheese icing needs to be refrigerated. Is there any way you could wait and put the fondant on at the last minute?
