How To Make Water/waterfall

HI all!
I am making my dd a Tinkerbell cake this Sat and would like to have some sort of water incorporated in it. I would like to use the gel because I think it looks the best. I have never done even a tier cake before so I am still working on the design, etc. When I do the water or waterfall, I am guessing I need to sculpt it how it should be, then fondant the cake and stack it and just add the appropriate amount of gel? Also, is the small gels that are sold in the store my best bet or is there a way to make this? Any help is appreciated.

I use piping gel and add the color to it.

I made a waterfall using piping gel that I colored blue. I spread it over white crusting BC since the base fondant was grey. You can see it in my pictures: The duck hunter's groom cake.
