I'm making my diabetic friend's bridal shower cake and would like to make at least a portion of it diabetic friendly for her. I wasn't asked to make it sugar-free or anything, but i'm not sure if the person throwing it has really thought about that aspect. SO my question is does anyone know of any delicious recipes for cake, frosting, and fondant that are diabetic friendly? I really want this to be a great cake, because I'm hoping to be hired to make her wedding cake (her shower is pretty early and right around the time she's going to be making a lot of her wedding decisions). Any advice would be great!

well, i looked at the recipes on here, but would like specific recomendations, i was tentatively thinking about the basic yellow cake with splenda and the whipped topping icings, but i'm worried about working with splenda, because i've heard it's not that great of a product.
so if anyone has used, tasted, and liked a particular recipe that would be the most helpful thing for me
