I have to bake a cake for 15-20 people, I offered to do a 2 layer cake, one six inch round and an 8 inch round, each cake is 3 inches high. Do you think that will be enough? or should I bake 2 layers making them 6 inches in height?

It sounds like more than enough. One 3 inch layer is fine.
