Hi

Im new to all this cake baking and decorating and im abit stuck.

Im going to make my first birthday cake. Im going to cover it using fondant icing, but im not sure what sponge to make? Do i make a victoria sponge, sponge, maderia??????? I want to fill the cake with jam and buttercream, so do i bake the cake in 2 halves, or as one and slice it in half after?

Choose a sponge that is dense enough to take the weight of buttercream and fondant (Madeira is a good choice). You can bake one 2 inch layer and split it or bake 2 layers and not split them. You could also split the two layers and fill them. No not trying to confuse you just trying to show you that anything is possible it's just up to you. No worries just have fun and Happy Baking! hth
