Sorry I know the answer is on CC somewhere, but the search button is not working for me ( and I got conflicting answers on google).
I made the cake and some awesome ganache, the cake is now covered in ganache....do I put it in the refrigerator to harden it up more before I cover in fondant or cover while it is still somewhat soft ?
Ideally give it several hours to harden at room temperature, only use the fridge if it is really warm where you are or if you are in a hurry.
I have planet cakes' book and they say it's best to leave it overnight but if you're in a hurry you can stick it in the freezer for up to 10 minutes. Since I'm always in a hurry, I do the freezer thing and I haven't had any problems.
Thanks for the quick info !! I have time, so I think I will leave it out till tomorrow morn - then cover with fondant and gumpaste flowers.
thanks again !
