Need Help Doing Gingerbread Cookies

I just made my first batch as a test run for the 100+ that I will be making next week. The cookies were great coming out of the oven. I used the Grandma's receipe in the Wilton book. But, the next day they were hard as rocks. My son told me they would break his teeth. I know the houses get hard and they are suppose to be. I need some to be hard because kids are going to be decorating them but I also am making some for a party to be eaten. I don't like the taste myself but my family these were great and they tasted like they were suppose to. My questions are: How long ahead of time can I make them (100 is a lot!)? How can I soften them up (I tried reheating in microwave and they burnt)? Is there an easier no way to mess up receipe to try that would be better? Thank you all for any suggestions. The cookies will be about 5 inches for the kids to decorate and the party ones will be the mini ones. Any help will be greatly appreciated.
