Carrot Cake Recipe For A Sheet Cake

Does anyone have a really good, easy recipe for a carrot cake that bakes up really well in a sheet cake pan?

I need to make a carrot cake sheet cake by Saturday. I really like using the doctored box recipes but any advice/recipes are greatly appreciated.

The size of my tin is 12" x 9" and at 2" high and yes, it bakes well in that. What size is your tin?

I use a 13 x9 x2.

That should be fine. And when you line the tin make sure you leave lining paper few inches above the tin. Its a lovely cake. icon_smile.gif
