Sarahs red velvet cake tweaked here on CC is excellent. Had nothing but excellent results.

I use cake man raven's also - except you can use about 1/2 of the red coloring and it's still bright red (I use Wilton's no taste red), and I think it's a bit oily, so I reduce the oil by 1/2 cup, and increase the buttermilk by 1/2 cup. It quickly turned into everyone I Know's favorite cake. It's fantastic.

A very well-known bakery in Baltimore that I used to be employed by makes there's by using German Chocolate cake MIX, adding red food color, using butter instead of oil and milk instead of water.
