Hi all, the cakes i've made has been with crusting be so they can be smoothe I'm making a sponge bob cake, i used the 3 star tip, it crusted, i know the bc inside must be soft, but i was wondering is there a non crusting i can do borders and stars so they won't crust and be fluffy like a cupcake frosting when it's soft , or wil it not work, Thanks
swiss merinque butter cream works wonderfully and is pretty easy to make (easier than italian merinque plus you heat the egg whites to the point where they are food safe).
i did a spongebob cake, complete with star tip covered pineapple house, and it worked beautifully. (it's not in my pictures because there was a person in the photos, lol).
if you have a large area to cover in stars like i did, i would recommend two bags of icing so that you can switch them to keep the icing from getting too warm. i lay the bag i am not using on a cold surface while i use the other one. you won't need to do this trick if you are only coving a small to moderate area.
