Will I Need To Dam?

Hi. I am going to be using whipped ganache for the 1st time. I am hoping the recipe I got from here is good! I was wondering if I still needed to use a dam with this type of filling? I am actually making layers with whipped ganache in some and raspberry preserves in the others. Thanks for any help here!

I'd think yes for raspberry preserves and I'd use the whipped ganache to pipe the dam.

Just a dam thought. icon_biggrin.gif

Thanks, K8memphis! I thought that might be right. Now another question-do I need to keep the cake refridgerated? I will be putting fondant on it, too, if that make a difference.

ganache doesn't need to be refrigerated. unless your raspberry filling needs it, you'll be fine leaving it out.

I've left my ganache cakes out 3 days and they were fine.
