I am making several cakes for saturday but I am going out of town on Friday. So I have made the cakes and iced/fondant them today(wed)
Should i keep them in the fridge to stay fresh or will they be ok till friday?

Refrigerating cakes doesn't keep them fresh... And it actually causes bread to stale more quickly:

(However, it does keep cakes with perishable fillings and/or frostings from spoiling.)

A cake baked and decorated on Weds. should be fine until Friday. icon_smile.gif

Will the bc spoil if it is an IMBC or SMBC left out for 2-3 days?

Yes, they will be fine. Leave them boxed up on the counter.
