I was asked to do a wedding cake that has fresh fruit around the base of every tier. The cake will be covered in fondant. What are my options for doing this because I'm thinking the fruit would make a mess. Also the bride said she saw a technique on tv that put a coating on the fruit so it could be used on a cake..like a sugary thing..anyone know what this is?

I've used fresh fruit many times on cakes and it doesn't make a mess. I've used strawberries, raspberries, blackberries, grapes....
