I need to make a sheet cake that has a cream cheese filling. Once I ice the cake with a thin layer of BC and cover with Satin Ice fondant, do I need to refrigerate it? If not, how many hours can I leave it out before the cake is cut?
I always refrigerate all my cakes...but definitely would if it contained cream cheese.
Unless you used a shelf-stable cream cheese recipe (and most aren't), you need to refrigerate. I haven't had any problems with refrigerating a fondant-covered cake...I know people always describe problems but it works fine for me so far.
