thanks jan. i am not trying to preserve, though, i just want to know how long in advance i can make gumpaste flowers. i have 100 cupcakes, 6 four inch fills and 24 chocolate dipped strawberries, plus a birthday cake to make all for next week and i am wondering how far i can do parts in advence and still be okay.

thanks so much!
