I recently bought a pail of satin ice fondant at my local cake decorating supply store. The clerk said she opened a pail, then used it after 6 months and it was totally fine.

How long does this stuff last and how should I store it? I don't want to make anyone sick!

If it helps, I've used an eaten Satin Ice that was over a year old and it was fine.

It needs to be stored in an airtight container in the fridge.

The fridge is totally not necessary. On the shelf is fine. Tightly wrapped is the key.

I agree. I use it all the time. Tightly wrapped for a year, and it's fine.
