Meringe Powder Instead Of Eggs For Sugar Cookies?

Well i have this itch to make sugar cookies, but I only have 1 egg and the store is a 1 1/2 hour walk with my 2 year old.... can i substitue meringe powder and water for the extra egg?

Your losing the fat from not having the yolk. Since it's only one your replacing you might have a shot. The texture, and baking will be different. I would think they would be crispier than usual.

I have not substitued it in cookies, but I did a cake. It made it extremely fluffy (cake mix based, not scratch) not sure how it would do for the cookies. Let us know if you try it - I would like to see how it works too!

I have a TON of meringue powder here to use up now.
