I am making my first birthday cake for someone who is not family...the cake is going to ride with my husband to work on Wed. I would like to go ahead and make the icing now if possible. I am doing a buttercream and whipped chocolate ganache.

These are the recipes I am planning to use:

1 cup unsalted butter
2 sqs unsweetened chocolate
2 table spoons light corn syrup
1 lb. domino powdered sugar
2-4 tables spoons lowfat milk

1 stick butter unsalted
1 stick butter salted
1 cup shortening
2lb bag powdered sugar
3 tsp. clear vanilla
5-6 tablesspoons milk

If i make these now will they be good to use on tuesday and should I put them in the fridge? What would be the best way to get them back room temp if I do need to put them in the fridge?

Thanks
