Freezing For 10 Minutes ???

Hi All!

I am wanting to cut the sides of my cake to make them completly straight. I have a slight bulge at the very bottom of my cake I want to get rid of. It will be a Buttercream Iced cake.

It is a BOXED German Choc. cake. If I freeze it for only 10 minutes to slightly harden the cake, to prevent it from falling apart when I trim it, do I need to worry about condensation??

When it thaws after 10 minutes will there be a lot of "Wetness". I have had soooooooooooooooooooooo many cakes "blow out" on me because I use to freeze them all the time a couple weeks in advance. No matter if I leave the wrappings on or off when thawing, wait 30 minutes or 2 hours, the cake stays wet??!!??!!

Any suggestios is appreciated....

I think if you only freeze it for 10 minutes, it should be fine and not get condensation.
