I live in Charlotte NC (not sure if that matters).... I want to learn to temper chocolate, I was told the chocolate discs from michaels don't really cut it???? So what chocolate should I use and where can I get it? I was told to get European chocolate-?????? Please help.

Hey Ladybug....I am near Lake Norman!
Here is a good video on tempering.
I don't like wilton discs. It isn't real chocolate, but chocolate flavored.
