Is there a website that lists all the cake conventions? I live in Florida and would love to go to a convention and see the different ideas, demonstrations, etc.

Check out The American Cake Decorating magazine website. They have a list of most the events.

www.ices.org has a lot of the listings on there. Each state usually has a DOS 2X a year.
