I don't know if you do scratch or box. I do box but always add extras so I feel like that's a nice middle of the road between the two. I get a lot of my recipes from the cake mix dr for cupcakes book and this one is in there. I haven't made it yet but it's on my list... icon_lol.gif

1 cup white chocolate chips
1 white cake mix
1 c whole milk
1/3 c oil
1 large egg
3 large egg whites
1 tsp pure vanilla extract


Melt the white chocolate chips in a microwave and stir until smooth. Set aside to cool slightly. Put cake mix, milk, oil, egg, egg whites, vanilla, and melted chocolate in a large mixing bowl. Blend with electic mixer on low for 30 sec. Stop and scrape down sides. Increase speed to medium and beat 2 minutes longer. Bake as usual...I always bake on 325 for about 25 minutes for reg size cupcakes. That's with my oven though. You should be able to get 22-24 cupcakes from this recipe.
