hi!!!

So I am making a 3 teir cake for my daughters 2nd birthday.

I wanted to try doing 1 tier White chocolate, 1 tier chocolate, and another red velvet.

What are the best icings for these>?

The cake will be covered in MMF...... and i have always using BC. Is BC still an option??

Hi, I would go for the white choc ganache for the white choc cake. You can use respberry as well. For the choc cake, choco ganache. You also can use hazle nut/orange/choc fudge/choc mousse for the choc cake. And for the red velvet, I would go for the classic filling, cream cheese frosting. But make sure you put that in the fridge as it is cream cheese. HTH. icon_smile.gif

ive never worked with ganache lol. and can I put it in the fridge when it is covered in fondant???

For choc ganache, the ratio is 1:2 cream and chocolate. For the white chocolate ganache its 1:3 ratio cream and choc.The chcocolate should be good quality chocolate which should have at least 50% cocoa solids. Buttercream is most definitely an option! You can do all 3 in BC, but varying the flavor of the BC to go with the cake.

For the white chocolate cake I would do raspberry or strawberry BC.
For the chocolate cake I would do orange BC.
For the rv cake I would do white chocolate BC.

can I just sub. the vanilla for orange or strawberry in regular buttercream????

For the orange, yes. The strawberry artificial flavoring in the store tastes like artificial strawberry and will turn the icing bright pink. I prefer to mix jam with the buttercream. It still tints the icing, but it tastes sooooo much better. OR you can use LorAnn's flavored oil. For white chocolate BC, just melt white chocolate and add that to the BC like you would unsweetened chocolate for chocolate BC.
