Thanks to all that give me good tips on bc and cc. I have 2 more questions to ask. 1,) How long can your cakes sit out with cc frosting? 2.)
In using gin with gumpaste this the first for me?

According to this website - http://www.foodsafetysite.com/educators/competencies/consumers/storage/stg1.html - it is not safe to leave cream cheese at room temperature for any period of time.

I know that we leave cakes with cream cheese frosting covered and on the counter for several days (especially around the holidays when the fridge is full). As for product to be sold or for another person's consumption, I would check with the local Health Department or the Cooperative Education unit at your local University.
