Coconut Cake Filling?

Does anyone have ideas for a filling for a coconut cake? I thought about cream cheese with coconut in it but I'm not sure about that.

That sounds really yummy, you can also use a pineapple filling to make a pinacolada flavored cake.....mmmmm

This is a great Martha Stewart recipe. I double it for a 3 layer 9" cake: (you can find creamed coconut in the Hispanic food section or in the aisle w/ the drink mixes) It's part of her Milk chocolate ganache covered coconut cake. It's even better the next day after the flavors meld)

Yes, it's sweet but I don't find it overwhelmingly so. It's wonderful w/ the coconut cake and milk chocolate ganache icon_smile.gif
