Chocolate Covered Strawberries

I am going to cover a cake with chocolate covered strawberries on top. Can i put them on the night before and leave it covered on the counter or do i need to wait until the day of???

Need to wait as much as possible, what happens is the strawberry will start to ozze a little , and it may get on your cake.

I agree. Actually the longer you can wait to dip in chocolate the better. I lined the base of a cake (not sure if it is in my photos or not) but anyway, I did them the night before the banquet, kept in fridge and still when got there they were already bleeding. Maybe someone has a way to prevent this.

Did you guys wash your strawberries first? That will definetly cause a lot of "juice" underneath.

I have to dip them tonight, i will place them on the cake in the morning and take it to work to enjoy tomorrow afternoon....will that be fine???
