What should I use?
Like each one the same kinda technique--get it loose and either from a piping bag or from fork tines or from a comb type thing for creating spun sugar, gently sling the substance back & forth--let it set up then crunch it up a bit.
Like sling it on a lightly greased parchment.

And umm, sugarveil.
And there's some weirdly shaped Asian noodley stuff--rice noodles I think it is--
I have also seen the sugar veil product used for this. I have not used it myself, but it looks really cool when done. You may want to google it for more info.
I was going to say Sugarveil too. It would make an awesome spider web!
