I just finished making my son's birthday cake today(friday) for their party on sunday. It's been a really long time since I made a cake, but I thought if it was covered in MMF it would stay fresh for a few days. My husband now thinks it will dry out and I should put it in the fridge, but I read online that is a bad idea. Should I wrap it in plastic wrap as best as I can?
I'm not an expert, but usually cakes covered in fondant keeps the cake really fresh for a longer period of time. You will be fine if the party is on Sunday! I wouldn't cover it, it might make it sweat. I would just keep it out on your counter....if the filling does not need refrigeration that is. Your good!
