When I bake a 9 x 13 cake in my calphalon metal pan it's like a high rise in the middle...any way to get it more even? Should I us a lighter metal pan?

Turn the oven down to 325 F will help....also a shiny pan works better because the dark finish heats faster, allowing the edges to cook faster, forcing the unbaked batter to the center....hence the hump.

I use bake even strips and a flower nail (upside down) in the center of my 9X13 and bake at 325. I use wilton and magic line pans.
