Add Filling To A Half Sheet Cake

Ok, newbie, so this might be a stupid question. I am making a layered 1/2 sheet cake, and made this great rasberry filling, but not sure how to get in between the layers with out breaking them... Any help?

Torte the cake but instead of removing the top in one big piece, cut it in half and take off the two pieces separately. Add the filling and replace one half of the top. Apply a little bit of frosting to the cut edge and put the other top half on. TahDah!

Another method is to slide a cookie sheet or a cardboard (I use cardboard) under the top half and lift it off. Put on the filling, then using the cardboard, place one end in place and pull the cardboard out. Partially freezing the cake makes it easier to handle, especially if it's a half, 12x18, cake.

I cook my cake in two pans, that's the easy way for me to put the filling. icon_smile.gif Another method is to cut it with floss of course that it doesn't have to have flavor the floss.HTH
