I am making fondant roses for a wedding cake this weekend and the fondant is too sticky and won't ruffle (when using thin shaping foam). I am using Satin Ice fondant for the first time. I have always used Wilton in the past. Any advice would be greatly appreciated.
work more confec sugar into it...I just had this problem, too much humidity in the air maybe....just knead more cs in it little by little...hth
try using a little corn starch... should help. I always use Satin Ice and have NEVER had a problem with it.
I prefer home made mmf personally, did not care for satin ice
Also, it is best to use gumpaste, 50/50 or add some tylose in your fondant when making ruffles.
