Gingernut Caramel Tarts.

Place Arnotts Gingernuts over the openings in small cupcake trays. Put them in the oven on moderately high until soft. Take out of oven. Push down into shape of tray. Cool. Fill with caramel. Pipe cream swirl on top.

So easy and so delish!

I thought you guys could get Arnotts. They were an Australian brand of biscuits (cookies), but then an American company took them over.

One of their biscuits is called Gingernut, dark brown thin and very hard (hence Gingernut). icon_smile.gif

Jen80, I think I've seen those tarts in the Crabapple Cupcake book! Still yet to try them!!! icon_smile.gif

Lenette, I guess it depends what event the goodies tray is for to determine the assortment. A fancy affair or a casual do or as a gift? Sounds like fun! Personally, I like to include stuff that I have made myself - ie. petit fours or fondant fancies, little fudge brownies, small caramel choc top squares, jam tartlets, etc. This makes it a one of a kind piece & not something a trip to the confectionary aisle of the supermarket that anybody can do. Also, is it just one tray or multiple trays you need to make? Again, this would also determine what is to go on it. Anyway, my two cents.... icon_biggrin.gif
