I have a demo coming up in front of around 80 people who are certified dietary food managers. A lot of them work in hospitals, nursing care facilities, etc. The chef said to demo something that's somewhat simple but try to impress. My idea of simple is totally different compared to someone who doesn't make desserts for a living.

I was thinking about doing a traditional Flourless French Chocolate cake.

Any other ideas?
